1. RAISING AGENT

The raising agents used in the biscuit are sodium bicarbonate and ammonium bicarbonate. Though the latter is common in baked goods, ice creams and medications, it has some known side-effects. According to a material safety data sheet for ammonium bicarbonate by Sciencelab.com Inc., Texas, high quantities of this mineral salt can be an irritant to the mucous membrane and upper respiratory tract.
