To find out which was most preferred, 120 volunteers blind-tasted five brands of ketchup

How do you like your ketchup? Thick or runny? Tangy or mildly sweet? People have varying tastes, but tomato ketchup is the condiment of choice with fast food at restaurants and in homes around the world. People eat ketchup as an accompaniment to fries, burgers, samosas and even idlis.

To gauge consumers’ preferred ketchup brands and why they like them, we conducted a taste test using five ketchups from Kissan, Maggi, Heinz, Smith & Jones and Del Monte.

WHAT WE DID

At L S Raheja College in Santacruz, Mumbai, 120 students between the ages of 15 and 20 participated in a blind taste test led by our experts. Each participant was asked to taste two unmarked brands of ketchup with french fries and tell us which they preferred and why. We ensured that all the brands were tested against each other an equal number of times but in a different order.

WHAT WE FOUND

The results were close, but Kissan narrowly came out on top overall. It was the preferred brand in 58% of its head-to-head taste tests. One tester said, ‘It was sour and thick, exactly how I expect ketchup to be.’ Another liked its flavour: ‘It does not have the bland tomato taste, rather seems to have another flavour in it as well.’

Maggi comes a close second with 54% of people preferring it in its head-to-head tests, and it was widely praised as not being too sweet. ‘The taste of the tomato is prominent and it is thick’, said a tester.

Next is Heinz, with a 48% preference in its head-to-head tests. It elicited a mixed response, and while it contains the least amount of tomato pulp, many thought it had high amounts of the fruit. Some did not like its sour taste, and others felt it was too sweet. One of the tasters thought it was ‘tasteless’, and another said it was sweet and spicy.

Only 46% of the tasters preferred Smith & Jones over the other four brands they also tasted – many found it too sweet. Though some of our tasters preferred it because of its sweetness.

Del Monte was the least preferred ketchup at 44%. Some liked its sweet taste while others thought it tasted like ‘homemade sauce’. A taster who didn’t like it said: ‘It seemed average in taste.’

However, keeping in mind that while there are subtle percentage differences, there was no real statistical difference between the popularity of the different brands. Ultimately, your choice should be from personal preference.

Dr Samir Chaukkar, nutritionist at Health Total Clinic, Mumbai, talks about ketchup and its nutritional values.

He says, ‘Tomatoes contain several vitamins and minerals that are essential for the body to function and grow optimally. The high percentage of dietary fibre in tomatoes helps prevent cardiovascular disease and some types of cancer; it is also beneficial to those who want to lose weight.

‘According to a study in the Journal of the National Cancer Institute, people who consume large amounts of tomatoes are at a substantially decreased risk of numerous cancers.

‘Lycopene, a pigment that gives tomatoes their colour, has antioxidant properties (it counters the ill-effects of free radicals, which cause cell damage). It prevents premature aging and keeps skin soft and smooth. Lycopene is better absorbed when tomatoes are cooked with a little oil, rather than raw.

‘But though tomatoes are very nutritious, it doesn’t mean that ketchup is also good for you. You’d have to eat a huge quantity of ketchup to get a significant amount of lycopene.

‘Cooking methods and additives increase or decrease the calories and nutritive value of ketchup. Although ketchup contains lycopene , it also has additives such as salt, sugar and preservatives that reduce its overall nutritional value.’

1. ONION AND GARLIC POWDER
Dehydrated onion and garlic are powdered and added to the sauce for flavour. Powdering extends the shelf life of onions, and while onion powder is not considered a significant source of nutrition, it does contain certain vitamins and minerals. It is also free of saturated fat, trans fat and cholesterol. Garlic powder has the same properties as that of garlic, and helps in thinning blood. It creates small reductions in cholesterol levels and helps strengthen the immune system.

2. TOMATO PASTE
Tomatoes are cooked for several hours to reduce their moisture, after which they are strained, the skin and seeds are removed, and they are further reduced into a thick, concentrated paste. Tomatoes contain lycopene, but ketchup cannot be the sole source of lycopene in your diet.

3. PRESERVATIVES
These are added to prevent the deterioration of food by micro-organisms. Excessive amounts of these preservatives, whether natural or artificial, can be harmful.

4. SALT AND SUGAR
These are essential for taste and as preservatives, but are harmful if they exceed permissible limits. The recommended daily allowance for sugar is 20g and 6g for salt. The sugar used in ketchup is fructose, which reduces levels of the hunger-suppressing hormone obestatin while increasing the hormone ghrelin, which induces hunger. Surprisingly, none of the brands featured here listed the amount of sodium their product contained. Ketchup has a high sodium content and can harm those with high blood pressure. High sodium intake is associated with severe cardiovascular disease, stroke and even heart attack.

5. ACIDIFYING AGENT
Improves taste and retards the growth of some micro-organisms in the sauce. It also helps maintain a constant acid balance in food.

Expert’s verdict
‘Most of these brands fall under a similar bracket in terms of calorific content. If used in moderation, ketchup is alright. However, prolonged excessive consumption could pose a health risk in terms of increased risk of hypertension, diabetes and other cardiovascular problems due to its sugar and sodium content, and other stabilisers and preservatives,’ said Chandni S Kagalwalla, nutrition consultant at Nutricare in Mumbai.

In this report, we take a look at some of the latest smartphones available in India and give our first impressions of just-released phones that we will be testing soon

RIGHT CHOICES

89% APPLE iPHONE 4S

If you want to buy the best smartphone available, the iPhone 4S is a fantastic choice. But if you already own the iPhone 4, it isn’t worth spending a fortune on the new one. Instead, download the latest version of iOS for your current iPhone.

The new iPhone 4S (we tested the 16GB version) looks identical to the iPhone 4, but packs in numerous improvements underneath the 3.5-inch touchscreen. It runs on the same Apple A5 chip used in the iPad 2 (a dual-core processor) and should offer twice as much processing power and up to seven times faster graphics than its predecessor. We found the iOS 5 easy to operate.

The new iPhone’s most notable new feature is Siri, a voice-activated personal assistant that combines voice recognition technology with artificial intelligence, enabling it to answer questions and perform tasks. For example, if you ask, ‘Will I need an umbrella today?’, Siri will display the weather forecast.

The phone allows access to iCloud, Apple’s new online storage service that helps you keep all your content co-ordinated across different devices. Sound quality is impressive; calls sound clearer than normal even with background noise.

iPhone 4S features an outstanding 8Mp autofocus camera, which is huge improvement on the 5Mp camera on the iPhone 4. There’s also a front-facing camera for Wi-Fi video calls, using Apple’s FaceTime feature to other iPhone, iPod Touch and Mac users. It has full HD video (1080p at 30 frames/second) and comes with an effective image stabiliser. The music player is good. It’s easy to use with handy controls built into the headphone lead. The iPhone 4S is available with 16GB, 32GB or 64GB of internal memory. But there’s no memory card slot and it still lacks FM radio.

The Safari web browser is excellent. Pages load quickly thanks to the HSDPA (the equivalent of a 3.5G) connection and the phone is Wi-Fi capable. The responsive touchscreen helps with navigation, and we like the back button and the new tabbed browser. However, there’s still no Flash support, so you can’t play some online videos, access flash enabled websites or stream certain animation.

The battery is outstanding. We managed 467 minutes of talktime with medium reception levels and 208 minutes while browsing on a 3G network.

74% MOTOROLA RAZR XT910

For touchscreen and battery

Rs. 33,990

Specifications:

Display size (inches) 4.3 Qwerty keyboard No Touchscreen Yes

Camera resolution (Mp) 8 Operating system Android Internal memory (GB) 16

Even though it is thin (7.9mm), Motorola claims that the Razr is strong thanks to its Kevlar (high-strength synthetic fibre) and stainless steel body. It also sports a Gorilla Glass screen and is protected from water damage by Motorola’s Splash Guard nanotechnology.

This mobile phone is easy to use thanks to its responsive 4.3-inch touchscreen. A decent screen resolution of 540×960 pixels means that text is clear and easy to read. The sound quality on calls is average, with some calls sounding fuzzy or muffled.

The Razr runs on Android’s impressive Gingerbread operating system. ‘Ice Cream Sandwich’ has since supplanted Gingerbread and it is likely that Motorola will update the phone to this version.

It has a 1.2 GHz dual-core processor backed by 1GB of RAM. This should enable multiple applications to run smoothly simultaneously.

Battery life at medium 3G reception recorded 434 minutes of calls before running dry, which is impressive. But if you’re browsing online, it manages only 152 minutes of surfing at medium reception. Its 8Mp camera performed reasonably well in our tests. Some test shots appeared a little dark but overall the pictures displayed good detail and colour balance when viewed on our test monitor.

The Razr is also capable of recording video in 1080p HD resolution, although it struggles under low light. HSDPA (3.5G) and Wi-Fi connectivity are included, so internet access should be fast.

59% NOKIA LUMIA 800

Rs. 29,999

Specifications:

Display size (inches) 3.7 Qwerty keyboard No Touchscreen Yes
Camera resolution (Mp) 8 Operating system Windows Internal memory (GB) 16

The phone has a 3.7-inch, 800×480 pixels capacitive touchscreen. It is responsive, so typing messages on the onscreen keypad is easy, though you may have to turn the device to landscape as keys in the portrait mode are tiny.

The Lumia 800 is the first Nokia device to run Microsoft’s Windows Phone operating system, which is quite different from the usual operating systems. It collects all related applications, services and content in ‘hubs’; so, for example, the People Hub brings together all your contacts. Click on one and you’re given a variety of ways to contact them – you can even write directly on their Facebook wall.

The phone is equipped with ‘Mango’, the latest version of Windows Phone, with features such as multitasking and Twitter integration. You can access the Windows Marketplace app store, but this doesn’t have anywhere near as many apps as Android and iOS.

Nokia claims the 1,450mAh battery provides up to 9.5 hours of talk time on the 3G network. However, we found this to be severely lacking. Nokia has acknowledged a software glitch that it hopes to resolve soon. Our tests managed only 3.5 hours of talk time on medium 3G reception levels and an hour of browsing.

The phone has an 8Mp autofocus camera with LED flash. It includes Carl Zeiss optics and a decent aperture that we expect will perform well, although some test shots lacked sharp focus and colour balance in certain conditions.

The Radar runs the updated Mango version of the Windows Phone 7 OS, a slick and powerful operating system that impressed us. The Windows OS is quite distinctive, and has large tiles arranged on the screen with live updates, so you can get basic information, such as weather updates, at a glance without launching the app. HTC mobile phones often have a unique style thanks to the HTC Sense interface. The Sense interface isn’t applied to the Radar, but users still get the HTC flavour from HTC Hub, which is one of several tiles on the home screen.

The Radar has a 1GHz Scorpion processor, 8GB of onboard memory and a 5Mp camera. The 3.8-inch display is made of Gorilla Glass, which is tough and should withstand the occasional knock. It provides resolution of 480×800 pixels.

The 5Mp rear-facing camera can capture HD video at 720p resolution, while the front-facing camera offers VGA video quality and 1.3Mp stills. The Radar and the HTC Titan are the first Windows Phone 7 devices to feature front-facing cameras for video calls, bringing them in line with the latest iPhones and Android smartphones.

8GB of internal storage should provide enough space for all your photos and music, but like other Windows Phone handsets, you can’t expand this with a removable memory card.

HSDPA (3.5G) and Wi-Fi connectivity are included for quick internet access, so you can save on your data allowance by connecting to nearby hotspots. Flash, however, remains absent.

The BlackBerry Bold 9790 is the second from the Bold range to feature both a touchscreen and keypad as well as the latest and improved version of the BlackBerry OS, 7.

The BlackBerry OS 7 software includes improvements to the web browser, voice-activated search and BlackBerry Balance – a new feature that keeps personal and business content separate to help prevent you accidentally sending your Facebook updates to your boss, or inadvertently compromising company data .

The full Qwerty keypad makes typing long messages easy, although some may find the keys too small and fiddly to use comfortably. The touchscreen helps you easily navigate the menus, although at 2.45 inches it is a little small.

Like previous BlackBerrys the Bold 9790 features push email so messages will be delivered immediately rather than having to wait for your phone to periodically check for new emails. You will also have access to BlackBerry Messenger, the free instant messenger service.

A 1GHz processor is included and while this may not seem as powerful as the dual-core processors appearing on phones such as the Samsung Galaxy S II, it should be enough to handle most tasks smoothly.

A 5Mp camera is also included on the BlackBerry Bold 9790 along with a standard music player. It also supports Near Field Communication.

The Samsung Galaxy Note is a large candy bar touchscreen, weighing 178g. It comes with a stylus, has an 8Mp camera, music player, FM radio and microSD slot. It connects to the internet via 3G or Wi-Fi.

With a mammoth 5.3-inch capacitive touchscreen the Galaxy Note is certainly big, and it is also heavy. So it may not be easy to carry around in your pocket.

The 800×1280 pixel resolution is extremely impressive, suggesting that the Galaxy Note will be a good device for watching movies, viewing pictures or surfing the web with.

Part tablet, part smartphone, Samsung has included a special ‘S pen’ (stylus) for making notes and copying specific areas of an image, rather than the whole picture.

The large screen makes taking notes using a stylus practical, although until we try it out, we can’t say how well it will work or if it’s useful.

The Galaxy Note runs on the Gingerbread version of Android, which is not as fast as Ice Cream Sandwich used on Galaxy Nexus. It uses a 1.4GHz dual-core processor making it one of the most powerful mobile phones we’ve ever seen.

Android is a powerful, easy-to-use operating system with multiple, customisable homepages, integrated Google Maps and Google Mail, with access to downloadable applications from the Android Market.

An 8Mp camera is included alongside the standard music player and FM radio. The 8Mp camera sounds impressive, but we need to test it in our labs to comment on quality.

HSDPA (3.5G) and Wi-Fi are included so it should be quick at connecting to the internet, even using local hotspots.

The original HTC Sensation was an extremely impressive handset, a clear Right Choice in our lab tests. The new XE version has many improvements, such as a faster processor, bigger battery as well as branded headphones.

It is the first phone to come out of HTC’s partnership with Beats Audio. Developed with rap artist and producer Dr Dre, Beats claim to make the best headphones in the world. We will wait until we test them in our labs but it makes a change from the cheap headphones often bundled with mobile phones.

HTC has also tweaked the hardware. The 1.2GHz dual-core processor in the original was already impressive. This has now been upgraded to a 1.5GHz dual-core version, while the battery is now a 1730mAh (1520mAh earlier).

There is 4GB of built-in memory and a 16GB microSD card bundled with the device. The phone has a 4.3-inch capacitive touchscreen and a screen resolution of 540×960 pixels.

It features Android’s Gingerbread operating system (same as Galaxy Note) with multiple homescreens that you can customise. Google Maps and Google Mail are integrated and you can choose from thousands of other apps and download from the Android Market.

Like many manufacturers, HTC regularly modifies Android with its own interface, HTC Sense. The Sensation XE has the latest version of Sense with added features. A new, customisable lock screen makes it quicker to get at your favourite functions, and an updated weather application has new audio-visual effects.

The XE includes an 8Mp camera and can record video in 1080p HD quality. It comes with HSDPA (3.5G) and Wi-Fi connectivity.

Twenty consumer goods will have set sizes to make price comparisons easier for consumers

While FMGC (fast-moving consumer goods) manufacturers and retailers are not pleased, the standardisation across brands of package weights for similar products will be very beneficial to consumers. The Union Ministry of Consumer Affairs passed a notification on October 24, 2011, making it mandatory for at least 20 common consumer goods to be sold in uniform sizes.

From July 2012, products like baby food, weaning food, biscuits, butter, cereals, bread, tea, coffee, edible oil, beverages, milk powder, rice, wheat flour (atta), salt, aerated drinks, mineral water, soap, detergents, cement and paint, will have to be sold in stipulated pack sizes of certain weights. For example, coffee can only be sold in packs of 25g, 50g, 100g, 500g, 1kg and then in multiples of 1kg. For certain categories such as detergents and milk powder, there is no restriction below 50g. Salt can be sold below 50g in multiples of 10g. Violations will attract fines between Rs. 25,000 and Rs. 1 lakh.

MISLEADING SIZES

At present, discrepancies in packet sizes and weights between brands selling the same product make it difficult for consumers to compare prices. For example, coffee is sold in packs of 170g and 175g, while detergents have odd denominations such as 400g and even 713g. Companies are often known to reduce the weight of packages while keeping the price constant. The government is hoping to curb such practices as they mislead consumers.

Pune resident and freelance content writer Deepti Grover (27), welcomed the move saying, ‘This is a welcome move. When I go to the supermarket, I’m usually so rushed that I don’t have the time to calculate the best rates. But with standardised packet sizes, I think I will be able to do this easily.’

However, FMCG producers are not happy. Their grouse is that they will no longer be able to sell promotional offers with extra amounts in a pack. Besides, the smaller markets’ value chain, based entirely on Rs. 1, Rs. 2, Rs. 5 and Rs. 10 packs, will suffer. They have requested the government to reconsider this norm at least for these sensitive price brackets.

Proposed fuel-efficiency ratings for cars by the Bureau of Energy Efficiency leaves industry experts confused

Last year was tough in terms of inflation and fuel prices. Therefore, the news that the Bureau of Energy Efficiency (BEE) has set regulatory standards and star ratings for the car-manufacturing industry seems, at first, like a step in the right direction.

Formed in 2002 by the Union Ministry of Power, BEE plays a crucial role in testing and evaluating the energy efficiency of household electrical appliances including refrigerators, air conditioners and water geysers. These appliances are then labelled with star ratings to help you make informed choices and opt for energy-efficient devices that save money on electricity bills.

In November last year, BEE released a consultation paper that defines fuel-efficiency standards (based on fuel consumption in litres per 100km) and recommended a star rating (based on a five-star scale, with five being most efficient and one the least) to help you compare the fuel efficiency of different car models within the same weight class.

However, it is the Automotive Research Association of India (ARAI) that tests and evaluates cars sold in the Indian market on a range of parameters like vehicular safety features, automotive equipment and fuel efficiency. Therefore, the recent announcement has caused confusion. It is unclear if the BEE fuel efficiency ratings and labelling will work in conjunction with existing ARAI ratings or replace them.

Delhi-based automobile industry expert Bunny Punia (Gaadi.com) explains, ‘Cars in India are already certified by ARAI for fuel economy under a standard test cycle. These are standalone figures not linked to price, weight or engine capacity.’

‘However, the new BEE norms will measure and rate the fuel efficiency of cars in various segments based on weight. This isn’t practical as weight is not the best parameter to differentiate between cars or make new segments. For example, a diesel sedan, Tata Indigo TDI, will be considered in the same segment as a petrol hatchback like the Volkswagen Polo 1.6. These two cars differ in size, fuel efficiency and price.’

Preliminary estimates by the BEE indicate that presently only 9-16% of car models sold in India can be described as energy-efficient. The government is hoping the star ratings will help push manufacturers to bring down the average fuel consumption of cars in India.

Until the government clarifies whether the ARAI ratings are being replaced or modified, the new star ratings will only serve to confuse car manufacturers and consumers alike.

A slim, stunning and highly portable machine. But does this 13.3-inch laptop’s performance live up to its sleek looks?

The Asus Zenbook UX31 E-RY012V is one of the first Ultrabooks – Intel’s new moniker for a breed of ultra-thin, ultra-light laptops that still deliver high-end performance.

The slimline form factor doesn’t leave a lot of room for sockets and, like this model, they don’t come with optical drives so you can’t directly play CDs and DVDs. The Asus has just one USB 2 and one USB 3 port, along with a mini-HDMI port, a headphone output, an SD Memory Card slot and a DisplayPort connector. Adaptors are provided to connect a VGA monitor to the DisplayPort or a 100Mb Ethernet connection to the USB 2 port, and with 802.11n wi-fi and Bluetooth built in you have all the basics covered. But if you have a lot of devices you want to hook up, you’ll either need a hub or another laptop.

SCREEN AND SOUND

The screen is slightly disappointing. The combination of the 13.3-inch size, the widescreen format and the 1600 x 900 resolution makes it sharper and more space-efficient than the screens you’d find on many 12-inch to 14-inch models. Sadly, while it’s certainly bright, colours look washed out and the shiny surface can make it hard to view in some lighting conditions. Sound, however, is exceptionally good, with the Bang & Olufsen speakers producing a louder, richer noise than you might expect from a unit this small. We like the touchpad. It is very large, with buttons built into the corners of the pad to maximise the usable area, and is also very responsive.

PERFORMANCE

Despite its diminutive form, it packs in an Intel Core i7-2677M processor running at 1.8GHz, which can boost up to 2.9 GHz when required. With 4GB of Ram and a 128GB solid-state hard drive installed, the UX31 has enough power to tear through even the most demanding applications. The one caveat is that the graphics processor built into the Core i7 isn’t particularly powerful, so 3D games and applications won’t run as fast as they might on a lesser processor accompanied by a dedicated graphics chip. The laptop is priced at Rs. 1.05 lakh.

Verdict The laptop delivers excellent performance and looks great. However, its washed-out screen and limited built-in connections could pose problems.

Now you can install security software on your mobile phone. We tested five at our lab, both for iOS and Android models. We tested for ease of use, exposed them to malware from various sources and looked carefully at their features and claims.

Most are free, but you may have to pay for extra features.

APPLE iPHONE

Trend Micro Smart Surfing is free from the App Store. Like most iPhone apps, it’s easy to install. Its main function is to prevent phishing attacks by blocking access to websites that claim to be genuine and ask for personal information. It works well and you can modify protection levels.

Also free, Webroot SecureWeb Browser’s main security element is also an anti-phishing feature. It didn’t prevent us entering one phishing website, but stopped us entering others. With both apps, you have to browse the web from within the app for it to work. Neither will block you from entering a suspicious website if you’re using standard Safari.

ANDROID

Kaspersky Mobile Security 9 (costs Rs. 599 at retail stores but can be downloaded from the Android market as well) has a wide range of features. You can block calls and texts and remotely wipe data if your phone’s stolen. But it didn’t find all the malware we had loaded and it was hard to find which malware it had cleaned.

Norton Mobile Security is free for the Lite version. Like Kaspersky, it failed to detect all malware. If your phone is stolen, you can remotely block the phone with a text message. For Rs. 599 a year, the full version enables you to lock the phone, preventing a thief from replacing the SIM card. It also lets you block calls and texts.

Trend Micro Mobile Security claims to scan your phone’s apps. It’s free, but for Rs. 842 a year adds anti-phishing, parental controls and lost mobile security features.

Webroot Secure Anywhere Mobile is the best free software we tested, with anti-phishing, remote phone lock, locate device, scream, call and text-blocking, and anti-malware. Add remote-wipe and SIM-card lock for £12.99 (Rs. 1,062) a year.

SMARTPHONE MALWARE

Viruses and other web nasties aren’t confined to your desktop or laptop; any device that can access the internet is at risk, like a smartphone that runs apps. The majority run safely, but some apps may contain malware.

Apple, maker of the iPhone, vets apps before they’re available at its App Store. It’s why the iPhone is more secure than Android phones, as Android apps aren’t checked as comprehensively. But malicious apps are rare.

1. PROTEIN HYDROLYSATE

It is a mixture of amino acids prepared by splitting a protein with acid, alkali, or enzyme. It is absorbed more rapidly than free-form amino acids and much more rapidly than intact proteins. This is because it is already partially broken down and can be quickly digested and absorbed.
